Sour Cherry Pie

May just begun, and we were somewhere on the Olt Valley. It was dark, chilly and crowded. We still had sand in our shoes! - Taking a little reminder from the beach with us couldn't hurt, right?

Sun Waves won us all .. but it was over.  Now we were just a nostalgic gang, traveling back home, with still a long way ahead. Among us was a common acquaintance, called hunger.

I made the mistake to tell my little secret to Andrei. He looked at me with big eyes and a crinkled forehead. You could track the texture of my clothes on his skin, he slept snuggled with me half the road.

"Your mother's cake! She's baking??" - Then it started! Minutes and kilometers passed, we were surpassing trucks and cars , but the subject never changed. My mother's dessert had obsessed us all.

After another few hours, we finally arrived. I couldn't believe how much I craved a cake so trivial.

I called everyone inside.

Chechi, as we sweet talked about our dessert in our fatigue, kept the hands and mouths of my friends busy, throughout the whole spontaneous visit. My kittens were still small, but it made no difference - no one heeded them.

I can truly say that we were happy.

But guess who was the happiest?

My mother.

The motherly spark in her eyes touched me. The others haven't noticed. The cake came at the ideal time and place. We didn't need anything else.

Her recipe can't be any easier. Chechi  had caramelized nuts and melted chocolate, but this was back in 2013 .. This year we're baking it with fruit!

Aveam inca nisip in papuci!

"Chec? Face mama ta chec?" - Atunci a inceput!

Chechi, cum il alintam in oboseala noastra buimaca, le-a ocupat mainile si gurile amiciilor mei, pe tot parcursul vizitei spontane.

This is just incredibly easy to make.

  • Take out the seeds of the sour cherries (or thaw frozen sour cherries, then drain the juice). The amount depends to you.. "Less is more" does not necessarily apply here.
  • Preheat oven to 140C.
  • Beat 3 egg whites until they become foam.
  • Add 3 tablespoons of sugar and a 1 of vanilla sugar (or 2-3 drops of vanilla essence)
  • Introduce 3 yolks in the mix, 3 tablespoons oil and 3 tablespoons water.
  • Add a serving of baking soda, with freshly squeezed lemon juice to the mixture.
  • Add flour, until you reach the consistency of thick cream (liquid, soft dough)
  • Pour in a pan, add cherries (and sprinkle a little sugar, if you prefer, for caramelizing)
  • Shove it in the oven!
  • Drool for 20 minutes, then you can take it out.
  • Voila!

It can be served warm, with vanilla ice cream, or cold next to your morning coffee.

  • Torni intr-o tava, adaugi visinile ( si presari putin zahar, dupa preferinta, pentru caramelizare )
  • Hop in cuptor!

It's not so fun, when the cake sticks to the pan, right?

Forget about flour or oil, and use baking sheets. Caress the sheet with a piece of butter, all over,  just to be safe - The cake is easily removable and thanks to the higher corners sticking out of the pan, you can take it out of the tray even if it's hot.
